Betta Bruscetta

1 Baguette- cut diagonally and broil on each side
Slice 6 tomatoes
4-5 leaves Basil pile leaves and Roll, then cut to make confetti
Coarse salt
EVOO
Rub garlic on bread so the flavor doesn't overtake the tomato/basil flavor.

DInner Rolls and/or French Bread

YUM! Makes either 24 rolls or 2 loaves of french bread, or 12 rolls and 1 loaf!

Found this in the ward cookbook and manipulated- Very easy bread recipe

3 C. Warm Water
2 Tbsp Sugar
2 Tbsp oil or shortening
3 tsp. Salt
2 Tbsp Yeast
7-8 C. Flour

Combine first 4 ingredients. Sprinkle on the yeast and mix in the flour. Cover and let rise, stiffing down every 10 minutes for 1 hour. For rolls form ball shaped rolls on greased 9x13, let rise 30 minutes and bake at 400 for 20-25 minutes. For french bread roll out on floured board 1/2 in thick. Roll up like a cinnamon roll. Slice the top diagonally 2-4 times with knife. Put on greased cooke sheet. Brush the top with egg whites. Let rise 30 minutes. Bake at 400 for 20-25 minutes. Makes 2 loaves.

This might be in my fridge if you stop by this summer. OMGsh best salad ever

Jerk Chicken Salad-

Dressing: mix together

4         limes juice/ zest of 2
2/3 C. reduced fat mayo
4 T.    pineapple preserves (or crush 4T. of fresh pineapple, mix w/sugar and let sit 5-10 min)

Chicken: mix oil and  jer rub in bowl, then add chicken and coat well. grill over med heat 6-10 minutes until cooked. Cool and cut into bite sized pieces.

1 T     olive oil
1 T.     jamaican jerk rub (pampered chef or other)
1 lb.    Chicken tenders

12 oz pasta- rotini or similar cooked and cooled- sprinkle w/pinch of salt to keep from sticking
1 med  pinapple cut into small spears and grill over med heat 4-6 min ea side. cut into 1/4 inch pieces and cool.
1 can (15 oz) black beans drained
1 red bell pepper thinly sliced
6 slices bacon, cooked, cooled, crumbled
3 green onions thinly sliced- white and green parts only

Mix it all together and enjoy! I use my george foreman grill for the pineapple and chicken and keep the dressing on the side, makes great leftovers. Easy and Delicious!!

Stuffed French Toast

My friend Julie inspired me to cook more now that I am almost done with school. She gave me this idea and I couldn't wait to try it!

French Bread cut into 2-3 inch sections (large pieces)

Mix 4 oz. crm cheese with 2/3 C. powdered sugar and 1/2 tsp. vanilla
Strawberry Jam

Cut a hole into the crust on the side of the french bread. With a knife spread a small amount of cream cheese mixture as evenly as possible. Same with the Jam. Try to keep the hole small and not let the filling out the sides. Dip bread in egg mixture like you would regular french toast.
